I'm a simple man. When I get a bag of coffee, I open it, I make coffee, I drink it.

I know that I should be resting coffee and that after a week or two that it will taste better. I'm simply too impatient for that. Delayed gratitude is for my finances, not my coffee.

This bag has made me questioning that though. When I first brewed this coffee it was simply not good. The coffee was bland and yet also kind of tasted like bark. Not a great cup. I put it in my drawer where bags go to die.

Then, two weeks later, I tried it again, and I'll be damned. It was a totally different cup of coffee. It was fruity, a bit funky, and overall much better. That two week rest took this bag from a 3 to a 5 on my rating scale. Not a bad turnaround.

Will I be resting coffee from now on? No. Probably not. Will I intentionally rest mediocre bags? Maybe!
